summer breakfast

It’s hot. Summer is hot, proven by my social media feed filled with people posting photos of their car thermometers or screenshots of their weather apps. (do you remember winter….and the ice and snow? yeah, me too.)

It’s that wake up hot,
…go to bed hot, kind of hot.

If you’re like me and you don’t like a big breakfast (and if you can remember to prepare this before bed, which I know I’m asking a lot) this is my new favorite breakfast treat.

I know, there’s a billion recipes for these online. In fact I even saw pre-made “Refrigerator Oats” at target last week.

Some call for cute mason jars or fancy spices and yogurt

But, after experimenting and testing different methods my favorite recipe is this:

OVERNIGHT OATS:

in the smallest of my Pyrex Snapware (the little orange one):

1/2 cup gluten free oats
1 Tbls shredded coconut (unsweetened)
a few blueberries
some chopped pecans
1 Tbls maple syrup (agave, or other liquid sweetener will work)
1/3 cup milk of choice (coconut works great!)

Don’t stir, just snap the lid down, refrigerate overnight and in the morning you have a cold refreshing, (gluten free, dairy free) nutritious breakfast!

Of course the options to modify this are pretty endless; I find that the combination of the crunchy (pecans) and the sweet (blueberries) with the texture (coconut) make a great balance.

along with the warmer days, the sunshine, flowers popping up and the grass turning green; the other thing that comes around this time of year is those pesky allergies.

generally the symptoms for allergies related to pollen or ‘seasonal allergies’ are sneezing, itchy watery eyes, nasal congestion, runny nose, and possibly wheezing.

you can use them combined in various ways: combine all three in a carrier oil (such as fractionated coconut oil) and use as a rub to apply to your feet and temple as needed. you can also combine all three in a vegetable cap and take them internally (using only approved oils for internal use) or you can us the Triease Seasonal Blend by doTerra which is a proprietary blend of Lemon, Lavender and Peppermint in gelcap form.

cold turkey: day four.

or: how to quit nicotine in four (easy) days.

day four will bring a surge of energy, a feeling of being “out of the woods”, along with a slight antsy feeling. this was a good time to get out of the house–go for a hike, your senses will start to be heightened….new smells, a sense of almost “out of body” as your brain adjusts to the lack of nicotine.

helpful tips: fresh air, exercise, activity….keeping busy.

continue with lemon oil + water as frequently as possible, and take two more Zendocrine tablets today to continue flushing your liver of the toxins.

let’s talk about ginger.

I’m sitting here sipping a delicious cup of tea/bourbon/ginger infused simple syrup, (mainly because I was feeling the tinge of a cold starting, but also because I had made a jar of the syrup last night and needed a good excuse to use it)¬†when I started thinking about how often I turn to ginger for its healing and soothing properties.

fresh.ginger1. fresh ginger can stimulate a lax appetite. snack on a piece right before meals.

2. ginger improves the absorption of essential nutrients in the body.

3. ginger is great at clearing sinuses.

4. feeling airsick or nauseous? chew on ginger, preferably tossed in a little honey.

5. ginger helps reduce gas flare ups.

6. cramping or bloating–munch on ginger.

7. ginger, with its anti-inflammatory properties‚ÄĒcan bring relief to joint pain flare ups.¬†mix some ginger essential oil in a roller bottle with a carrier oil (fractionated coconut oil works great) and roll on as needed.

9. stir up some ginger tea to get rid of throat and nose congestion.

10. the Ayurvedic texts credit ginger with aphrodisiac properties…so try infusing ginger oil in the bedroom….

time for a toddy.

you know that feeling–the scratchy throat, dragging body, droopy eyes feeling. it started hitting me halfway through my shift yesterday.

when I got home, after eating a quick dinner I whipped up one of these hot toddies, piled on the blankets, and turned on the netflix.

(I think I’m due for another dose tonight)

maple bourbon ginger toddy:

{put the kettle on}

1 shot Bulliet Rye (or bourbon of choice)

1 teaspoon Crown Maple Syrup

1 drop DoTerra Ginger Essential Oil

2 Drops DoTerra Lemon Essential Oil

combine all in a mug while heating the kettle. when water boils, fill mug with desired amount of water.

I’ve been benefiting greatly from the use of essential oils lately, and sharing them with my friends and family to help them has become one of the best benefits. from helping my little nephew find a solution to his tummy aches, to the awesome sight of my brother in law inhaling peppermint oil for the first time and being able to breathe¬†through both nostrils for the first time in years! (priceless)

using oils in cooking is something I’m just starting to experiment with, and this recipe from doTERRA we’ve made several times, in that it’s so easy and delicious. you’d never know there was no refined sugars, gluten or dairy in these tiny pops of power and flavor.
